QUESTION 1 ANSWER
Which of the following greetings is considered INCORRECT?
- If it’s an individual: “Are you alone?” Or “Table for one?”
- “Good morning / afternoon / evening, welcome to Old Boys club”
- “Hello Sir / Mam, welcome back – good to see you again”
- If it’s a group: “Will you be having something to eat or just some drinks?”
A guest’s first impressions is created by the way you greet them, so we make sure we are polite and friendly. As guests are walking into the club – we ensure someone is slowly walking towards their direction. Approach guests with a sincere smile and greet them in a friendly but professional manner. If there is only one person standing in front of you, never ask “Are you alone?” or “Table for one?” – we rather ask “Will someone be joining you?” or “Will it be a table for yourself?”

QUESTION 2 ANSWER
When seating guests, which sentence is correct?
- Once the guests are seated, introduce yourself and ensure guests have been acknowledged, even if it is not your table
- If guests want to sit in a section that is not yours, you can point them to who their waiter is
- Guests can seat themselves and wait for their waiter
- Stick to your allocated area and focus on your guests
It’s important that guests are greeted and seated by a waitron / manager. We never seat guests and walk away. The most important thing is to make your guests feel welcome. Ensure you have introduced yourself clearly once guests are seated, before presenting the menu. The standard greeting is “Good morning / afternoon / evening, my name is _______, I will be at your service today”.

QUESTION 3 ANSWER
Which of the following sentences are INCORRECT.
- We allow guests to select their own waiters at all times
- If you are not the waitron of the table, inform guests that you aren’t but you will call _______, who will be serving them
- Don’t assume the waitron of the table knows there are guests seated at his/her table, we make sure to inform them.
- If you cannot get to your table immediately, we can ask a manager to take menus to the table and to take guests’ drink order.
At all times, we do our best to ensure all guests are greeted and seated by a waitron. We make it clear to guests who their waiter will be. If we have seated guests in a section that is not yours, we personally inform the waitron about the guests sitting at the table in their section. If you are busy when guests arrive in your section, you can ask any co-worker to assist with greeting, presenting menus and taking drinks orders.

QUESTION 4 ANSWER
What is an acceptable waiting time for the first round of drinks to arrive at the table after guests have been seated?
- Within 2 minutes of being seated
- It doesn’t really matter, as long as clients know they can order directly at the bar
- Within 5 minutes of being seated
- Any time before the guests start to get agitated
- Recommend any drinks specials or promotions.
- Know the ingredients of cocktail beverages and make sure you can describe them.
- Remember, you are not just a waiter, you are a salesperson – upsell whenever an opportunity arises.
- For example: Offer a bottle of wine instead of a glass of wine.
- Tables bigger than 4-seater:
- Start at a point and take orders clockwise
- Repeat the order, to make sure you get the order correct.
- NB: Write down guests’ preferences for service: (E.g. with or without ice, single or double shot, etc.)
The first round of drinks needs to be on the table within 2 minutes. Guests should never have to look for a waiter, if a guest has walked to you to order drinks, it’s an indication that we have failed in our service standards. If there are expected delays from the bar, let the clients know at the time of taking their drinks orders.

QUESTION 5 ANSWER
Which of the following are part of our internal standards?
- Always repeat the drinks order before leaving the table
- When guests’ drinks are ¼, offer them another round
- Guests should never have to call for waiters to refill drinks
- All of the above
We should always double check that we have the drinks order correct. It is best to use our note books to ensure we don’t make any mistakes. Guests drinks should never be empty before being offered another round or a refill. We should never have guests who have to call waiters for another round.
