It’s ok not to know. When we are not sure of something, we tell the client that we are not 100% sure, and we will go find out for them. Being open and honest with clients is essential – being lazy is not acceptable. A competent waiter is one that is disciplined in getting to know their menus, prices and stock well. Over time, competent waiters have to say “I’m not sure” less and less.
